Zucchini Fritters

Ingredients
2 Medium Zucchini, Grated
1 Whole Egg
1/4 cup Bread Crumbs
1/4 cup All Purpose Flour
1 tbsp Pecorino Romano
1 tsp Kosher Salt
1/2 tsp Black Pepper
1 tbsp Chopped Parsley
6 oz Extra Virgin Olive Oil
Preparation Instructions
Shred the zucchini on a Cheese Grater and set aside
In a mixing bowl, mix the egg, bread crumbs, flour, cheese, salt, pepper and parsley
Add the zucchini, mix well to incorporate and place in refrigerator for 15 minutes
In a sauté pan, heat the olive oil and scoop the batter into the oil with a tablespoon
Once golden brown on one side, flip the fritters and allow to brown on the other side
Remove the fritters from the oil and place on a paper towel to cool
