Print50-50 Bar Ice Cream Sandwiches - Orange Sherbert and Vanilla
Ingredients
- Two batches of blondies
- 1/2 gallon orange sherbet & vanilla ice cream (swirled or layered)
- 1/4 cup orange marmalade
Instructions
Prepare the Ice Cream Layer
Melt the ice cream in the microwave for about 60 seconds.
Press the softened ice cream into a 1/2 sheet pan lined with parchment.
Warm the orange marmalade in the microwave and drizzle it over the ice cream.
Cover with plastic wrap and freeze for 1 hour.
Prepare the Blondies
Bake your favorite blondies in the same size 1/2 sheet pan, again lined with parchment and sprayed lightly with non-stick spray.
Allow them to cool completely in the pan.
Assemble
Remove the frozen ice cream slab from the freezer.
Lift it out using the parchment and plastic, then place it on top of the first pan of blondies.
Top with the second pan of blondies—use the side with the parchment on it so the outside looks clean and smooth.
Cover with plastic wrap and freeze again.
Serve
Remove from the freezer about 10 minutes before serving.
Slice into squares and enjoy!
You can also wrap individual sandwiches in parchment or wax paper and keep them in the freezer for easy treats.
Variations
- Use any ice cream flavor you love
- Swap blondies for your favorite bread pudding (incredibly decadent)
- Try oatmeal cookies instead of blondies for a chewier sandwich
