Zucchini Fritters
Ingredients
- 2 Medium Zucchini, Grated
- 1 Whole Egg
- 1/4 cup Bread Crumbs
- 1/4 cup All Purpose Flour
- 1 tbsp Pecorino Romano
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1 tbsp Chopped Parsley
- 6 oz Extra Virgin Olive Oil

Preparation Instructions

- Shred the zucchini on a Cheese Grater and set aside

- In a mixing bowl, mix the egg, bread crumbs, flour, cheese, salt, pepper and parsley

- Add the zucchini, mix well to incorporate and place in refrigerator for 15 minutes

- In a sauté pan, heat the olive oil and scoop the batter into the oil with a tablespoon
-
- Once golden brown on one side, flip the fritters and allow to brown on the other side

- Remove the fritters from the oil and place on a paper towel to cool
