Zucchini Fritters

Ingredients

  • 2 Medium Zucchini, Grated
  • 1 Whole Egg
  • 1/4 cup Bread Crumbs
  • 1/4 cup All Purpose Flour
  • 1 tbsp Pecorino Romano
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Chopped Parsley
  • 6 oz Extra Virgin Olive Oil
  • Preparation Instructions

    1. Shred the zucchini on a Cheese Grater and set aside
    1. In a mixing bowl, mix the egg, bread crumbs, flour, cheese, salt, pepper and parsley
    1. Add the zucchini, mix well to incorporate and place in refrigerator for 15 minutes
    1. In a sauté pan, heat the olive oil and scoop the batter into the oil with a tablespoon
    1. Once golden brown on one side, flip the fritters and allow to brown on the other side
    1. Remove the fritters from the oil and place on a paper towel to cool
